  • Heat oil in a heavy skillet over medium heat.
  • Add onion, bell peppers, chopped cilantro and chile.
  • Cook 5 minutes, stirring occasionally or until soft.
  • Stir in corn, mushrooms, salt and pepper.
  • Cook 5 minutes, stirring occasionally.
  • Transfer to a warmed serving dish and garnish with cilantro.

  4. This was a nice side dish to our Mexican meal. I used a milder pepper and it was too mild. Very easy to make and very colorful.
     
  5. I used Jalapeno. I chopped it in half and seeded one half of it, then diced the whole thing up. It turned out very spicy but since we like spicey food, it was GREAT!
