- 1 lb round steak, fat trimmed, cut into 1/2-inch cubes
- 1 quart water
- vegetable oil cooking spray
- 1 large tomatoes, chopped
- 2 large poblano chiles, sliced
- 1 large onion, chopped
- 1 lb potato, unpeeled, cooked, and cut in 1/2-inch cubes
- chili powder, to taste
- salt and pepper, to taste
directions
- Heat beef cubes and water to boiling in a large saucepan.
- Reduce heat and simmer until beef is tender, about 30 to 45 minutes.
- Drain and shred beef.
- Spray large skillet with cooking spray; heat over medium heat until hot.
- Cook beef until beginning to brown and crisp, about 5 minutes.
- Add tomato; cook over medium heat 5 minutes.
- Remove mixture from skillet and reserve.
- Add chilies and onion to skillet, cook until tender, 5 to 8 minutes.
- Add potatoes and cook until browned, about 5 minutes.
- Add reserved meat mixture to skillet, cook until hot 3 to 4 minutes.
- Season to taste with chili powder, salt and pepper.
