Mexican Shoepeg Corn Dip

"A delicious dip! A cheesy treat with great texture. We make this all the time. It only takes <10 minutes total and can be easily halved. For 2 adults, halving the recipe is plenty for several servings each. For extra "BAM!" add some green chilis."

  • HOW EASY IS THIS :-).
  • After cubing the cream cheese, mix all ingredients in large microwave-safe bowl and nuke until melted, stirring occasionally.
  • Great served hot or cold, out of the fridge.

  1. I have made this for years. I add jalapeños to mine because I love spicy food. I eat my with Lime Tortilla chips. Delicious!!!
     
  2. I love this stuff! A niece of mine and her Mom gave me this recipe last year. But I use the mild rotel instead of the original and only 1 can. Everything else is the same. I also use the yellow corn tortilla chips from the Mexican isle in the grocery store. I use the McCormick’s mild chili seasoning packet. It says it is a 1.25 oz packet. I only sprinkle a sparingly amount into the dip. So how much would you recommend of this chili seasoning packet to the recipe?
     
  3. So easy and so good! I tried this both heated and cold, and actually preferred the cold version. I made a half-recipe (which made a lot), and served with tortilla chips for dipping.
