Mexican Skillet "stuff"

"We sort of made this up at home when we were little and we never really named it, we always callled if "that mexican stuff". Its adapted from a Hamburger Helper after our store stopped carrying it. *NOTE*: The servings really vary depending on how you serve it. I like mine over lettuce like a salad. You could also add more rice (and water) to stretch it out even more."

  • Brown hamburger in large skillet ( I use a 12"). Sprinkle in taco seasoning and stir to coat.
  • Add in water and rice and cook covered on medium heat, stirring occasionally, until all water is absorbed and rice is fully cooked, about 15 minutes. *If rice is done but there is still some extra water, remove lid and turn up heat to remove water. Make sure you stir while doing this, or the bottom might burn.
  • Turn off heat and add corn and stir to heat. You can also add cheese at this point.
  • The 'stuff' is now ready and can be topped with as little or as much as you want.
