ingredients
- 12 whole wheat tortillas
- 1 diced red pepper
- 1 dices sweet onion
- 2 lbs ground beef
- 2 cups hot salsa
- 2 cups shredded sharp cheddar cheese
- 1 cup cooked white rice (optional)
directions
- Brown ground beef, diced pepper and onion until done.
- Drain if necessary. Add cooked rice if using.
- Take 1/12 of beef mixture and put in center of 1 tortilla - fold left side over and roll up tortilla (don't bother closing either end).
- Place in greased 9 x 13 pan.
- Continue for other 11 tortillas (squish 'em in there, they'll fit!).
- Pour and spread the hottest salsa you can stand over the top of the tortillas.
- Top with cheese.
- Bake at 375 for 30 minutes.
- Serve with additional salsa and sour cream.
- Even better the 2nd day!
