"We got our new side of beef before we were out of last years ground chuck...so I'm doing new "stuff" with ground beef!"

  • Brown ground beef, diced pepper and onion until done.
  • Drain if necessary. Add cooked rice if using.
  • Take 1/12 of beef mixture and put in center of 1 tortilla - fold left side over and roll up tortilla (don't bother closing either end).
  • Place in greased 9 x 13 pan.
  • Continue for other 11 tortillas (squish 'em in there, they'll fit!).
  • Pour and spread the hottest salsa you can stand over the top of the tortillas.
  • Top with cheese.
  • Bake at 375 for 30 minutes.
  • Serve with additional salsa and sour cream.
  • Even better the 2nd day!
