Mexican Style Beef and Beans

- 2 lbs ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can rotel or 15 ounces medium salsa
- 1 (15 ounce) can pinto beans (drained)
- 1 (15 ounce) can kidney beans (drained)
- 1 tablespoon butter
- 1 teaspoon cumin
- 1⁄2 tablespoon chili powder
- 1 teaspoon garlic powder (or minced garlic)
- salt and pepper
- sour cream
- shredded cheese
directions
- In a large pan, melt the butter and saute pepper and onion for about 8 min, until soft.
- Add beef and brown. Drain fat.
- Add remaining ingredients except sour cream and cheese. If the beef looks too dry, add a second portion of Rotel or salsa. Cook over medium heat for 10 minutes.
- Sprinkle with shredded cheese and serve with a dollop of sour cream.
- Note: You can also add corn or use whatever beans you like best. We often add extra salsa or tomatoes.
