  • In a large pan, melt the butter and saute pepper and onion for about 8 min, until soft.
  • Add beef and brown. Drain fat.
  • Add remaining ingredients except sour cream and cheese. If the beef looks too dry, add a second portion of Rotel or salsa. Cook over medium heat for 10 minutes.
  • Sprinkle with shredded cheese and serve with a dollop of sour cream.
  • Note: You can also add corn or use whatever beans you like best. We often add extra salsa or tomatoes.
