Mexican Style Pulled Pork

- 2 1⁄2 lbs pork loin roast
- 1 medium onion (sliced thin)
- 2 cups barbecue sauce
- 1⁄2 cup salsa
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon oregano
- 1⁄4 teaspoon pepper
- 1⁄8 ttsp red pepper
- 1⁄2 teaspoon salt
directions
- Remove excess fat from pork. Place pork in crock-pot, arrange onion on top. Mix BBQ sauce, salsa, herbs & spices. Pour over pork.
- Cover and cook on low 8 - 10 hours or until pork is very tender.
- Remove pork and shred (pork should just fall apart). Put back in crock-pot and mix. Turn to low and keep warm as needed.
- Serve with fresh tortillas or buns. Garnish as desired.

I have one lil' girl who is 5 and another on the way (due in December). My hubby and I are pretty into fitness (weight lifting, rock climbing, etc). So as you will notice, I've got quite a few "protein" recipes. I love to bake. Cooking is okay but my real joy is baked goods (i.e., breads, pastas, cakes, cookies, etc). Not so conducive to the healthy lifestyle. But I like to say everything in moderation!!!
