Meyer Lemon and Fresh Cranberry Muffins

ingredients
- 1⁄2 cup canola oil
- 1⁄2 cup sugar
- 1 egg
- 1 lemon, juice of, meyer
- 3⁄4 cup milk
- 1 3⁄4 cups flour
- 3 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 lemon, zest of
- 1 cup cranberries, fresh
directions
- Preheat over to 400 degrees. Oil a muffin tin or used paper liners. Mix together the first five ingredients in a large bowl.
- In a smaller bowl, combine the remaining ingredients until the cranberries are coated in the flour mixture.
- Add the dry ingredients into the wet and combine until just blended. Drop by spoonful into muffin tim until each tin is 3/4 full of batter. Bake for 20-25 minutes.

These muffins have a very good taste. But I found that the ingredients should be mixed differently. Dry ingredients all together and liquid all together. Anyway, I guess it worked since my muffins came out great. 20 minutes at 400F was enough. I used frozen cranberries. Thanks mary. Made for 123 hit wonders

I agree with other reviewers who have said that directions should read Mix first 5 ingredients. I did so and got lovely muffins using frozen cranberries chopped into large pieces. Love, love, love Meyer lemons and what a really great combo this was. An easy and quick recipe that yields marvelous flavor. I swapped out the sugar for Splenda, replaced 1/4 cup of the milk with Meyer lemon juice and added 1/2 tsp of baking soda. Yummy!

Three stars because the directions are misleading...hence, I inadvertently left out the milk. My mistake, of course, but it should read "combine the first FIVE ingredients" and that would make sense. One would not add the milk to the dry ingredients. So they taste good but of course mine are dry & crumbly because I omitted the milk. I'll make again but will re-write the directions for clarity.

I have two boys who will usually eat most things I put in front of them. As a single mom I use them as my guinea pigs....sometimes it works, sometimes it doesn't. I have a huge garden, blueberry and blackberry bushes. I am always looking for a new recipe. I have three cats (Xiao Mao, which means little cat in Chinese, Pumpkin and Max) and two border collies, Lucy and Grace. All my animals come from Rescue Agencies.
