Michael White's Whole-Wheat Peanut Butter Waffles

  • In the bowl of an electric mixer fitted with the paddle attachment, combine the first 8 ingredients.
  • Preheat a waffle iron. When it is hot, spray its surface lightly with the cooking spray or brush it with the butter.
  • Fill a medium-size ladle with batter and pour it onto the waffle iron. Cook until the waffle is golden brown and a toothpick inserted into the middle comes out clean, approximately 3 to 5 minutes. Serve hot with maple syrup and butter or fresh berries.

  2. These were really good (and I'm not even a big peanut butter fan) - made them mostly for the peanut butter obsessed boyfriend (who ate 3 waffles). Ate mine with some chocolate syrup on top (to ruin the whole idea of it being healthy at all)...and he ate his with some jelly - PB&J...next time I'm hoping to have a waffle iron that makes slightly thinner waffles (the belgian just makes them too thick for this type of waffle). Made for PAC Fall 2009
     
  3. These are really good and easy to make. A batch made 12 4x5 inch waffles. My kids gave them 5 stars also. I cut them in strips and give them warm syrup to dip them in. The leftovers I keep in the freezer and pop in the toaster the next day. Thanks for sharing! Dawni

I am wife to my hunky hubby Chris. I am also a stay at home, extended breasfeeding, extended rear facing, delay/anti vax, babywearing, homemade baby food making, and cloth diapering mama to the most beautiful and precious 21 month old little girl out there. My hubby has a passion for cooking and has always watched the cooking shows. I have picked up on that passion and done my best to experiment and have fun with cooking. We often cook together and that is one of the highlights of my day. I have learned that I prefer to bake over cook any day, but that if I want to keep a waistline, I must cook! I like to try cooking and baking fancy things. I have a huge desire to make my daughter a fancy one year old birthday cake. Just for the fun of it, I know she won't remember...but I will! Edited to add: I did this! :)
