  • Preheat oven to 400 degrees.
  • Coat 3-quart casserole or baking pan with cooking spray.
  • In mixing bowl, combine all ingredients.
  • Transfer to baking dish. Sprinkle top with additional almonds.
  • Bake uncovered for 45 minutes. Serve hot.

  2. Can portions of this be frozen then pulled out individually for thawing and reheating? I'm always looking for office breakfast ideas, but many don't respond well to the freezing and reheating -- they get too soggy. It would be ok if this lost its souffle quality and deflated (might even be better in my case). Usually I can read a recipe and figure out the answer on my own, but I don't like the usual bowl of oatmeal, so I don't cook it. With high cholesterol though, it would be great to add oatmeal beyond cookies into my diet! Thanks for replying??

  1. Just wanted everyone to know that I made this in single serving silicone baking cups and it turned out great. After baking and cooling down, I put the cups in pint containers and freeze. For planned-ahead breakfast on my weekly menu, I remove the container from the freezer, take out the cup, pull the silicone liner from the oatmeal, and return the oatmeal only to the container. Then, if I'm in the mood, I drizzle maple syrup on top and add berries. But it's really very good with just the berries on top of the oatmeal. On the designated day on the menu, nuke on high at 60-90 seconds (depending on how cold it is), and you're set for breakfast with healthy berries smooshed over healthy oatmeal.
     
  2. We loved this! I halved the recipe, made with lactose free milk and left out the dried cherries but it will definitely be made again! I think next time, it will be with pecans and maple extract (I'm Canadian, eh?). Made for PAC Spring '12
     
  3. WOW, what a delicious morning treat! This puffed up like a soufflee and had the texture of a soft pudding. The taste was very much like marzipane and made everyone come back for more. YUM! I loved the apple and almond extract in this as well as the nuts. I used walnuts as I was out of almonds and thought that the darker taste of the walnuts would be a good match (which it was indeed). I got up early to make this and must have been too sleepy still, cause I forgot to include the dried cherries. Im sure they would have been nice, but for me they werent needed.<br/>THANK YOU SO MUCH for sharing this keeper with us, Ill make it again for sure!<br/>Made and reviewed for the Aussie/NZ Recipe Swap December 2011.
     
  4. Made this for brunch today...got it started a little late. This recipe received mixed reviews from the family. My youngest DD gave the recipe 3 stars, middle DD rated it 4 stars, and oldest DD wouldn't even try it. DS on the other hand said "Mommy, you have to make this again for me...it's sooooooo good!" so he and I both gave the recipe 5 stars. Even with the mixed reviews, I will definitely make this again. It will be so nice to make during winter when the snow blankets the ground. Made and reviewed for the OZ/NZ Recipe Swap #52
     
  5. This is a wonderful recipe! I recently returned to Weight Watchers and made this w/o nuts and 1% milk. I assumed 6 - 1cup servings and calculated the points plus to be 7. Hope I'm in the ball park. Will definately make it again - its very filling.

  1. This is one of those stick-to-your-ribs, keep you satisfied all morning breakfasts. Like the descriptions says, the texture was more like pudding than oatmeal. It was warm and creamy and delicious. I used dried cranberries in place of the dried cherries because that was what I had on hand. I really liked the flavors of the apple, cranberries and almond extract all melded together. Made for Nov 2010 Aus/NZ Swap.

<p>6/6/11- We bought another old house in Michigan at the end of January, with more room, but still with a small kitchen - lol! I did spend three months renovating the kitchen and it is very retro. It is bigger than the hobbit house kitchen, but still small. I also finished another degree - this time in small business and am now currently working full time on my small mobile art&nbsp;business. I sometimes miss working with the elderly as a mental health therapist, but for the time being I am doing what I had always wanted to do for many years. Plus I am enjoying fixing up my new old house.</p> <p>1/1/11 - Just a quick update on my profie, considering its been a few years since I updated. I still love to cook and we are currently looking for a new house, preferably another old house, but one with a larger kitchen. I have recently had some GI issues which are causing me to look differently at food. In the next few months you will start to see me post some new recipes that will be good, healthy and appropriate to those who suffer from digestive problems and IBS.</p> <p>I live in Michigan at this time, but have lived in several different states and countries. I like to cook and have recently been striving to cook healthy. I am an artist and therapist by profession. I enjoy walking, reading and making cards. I am also presently working on another degree to add to my collection of two bachelors and two masters degrees. The latest challenge is an online degree in small business management. <br /><br />I believe I probably cook in one of the smallest kitchens around. We live in an official bungalow, is even listed on the national registry. However, bungalow must mean very small, we nicknamed our house the hobbit house. The kitchen is equipped with a 1929 mini stove, limited pot space on the stove. We recently got a new refrigerator - almost standard size, except shorter - the old coil on the outside one died. I have so little room, I store the majority of my cooking items and can goods in the basement. My challenge is to be the best chef I can, despite my cooking environment.
