Microwave Caramel Nut Brownies

"Here's a great way to doctor up a brownie mix when you need dessert in a flash. I made mine in the oven instead of the microwave because I used a regular fudge brownie mix--not a microwave mix. I substituted cashews for pecans and in place of the water I used coffee. Delicious--this recipe got rave reviews from my guests. Recipe courtesy of Pillsbury Desserts."

  • 19 12 ounces fudge brownie mix (with pan)
  • 12 cup oil
  • 14 cup water
  • 2 eggs
  • 14 cup pecans, chopped
  • 13 cup semi-sweet chocolate chips
  • 2 tablespoons pecans, chopped
  • 2 tablespoons caramel ice cream topping

directions

  • Combine brownie mix, oil, water, and eggs in large bowl. Stir 50 strokes with a spoon.
  • Stir in 1/4 cup pecans.
  • Spread batter evenly in pan provided with mix (I used my own pan and greased it).
  • Microwave as directed on package or bake in 9x9" pan for 30 to 35 minutes (follow package directions for pan size and desired thickness).
  • Remove from microwave and place on flat surface.
  • Immediately sprinkle with chocolate chips.
  • Let stand 5 minutes.
  • Spread softened chips evenly over brownies.
  • Sprinkle with 2 tablespoons pecans.
  • Drizzle with caramel topping.
