Microwave Caramel Popcorn

"An easy way to make good sticky caramel popcorn. My family eats this often and it's a big hit around the holidays."

  • 12 cup butter
  • 1 cup light brown sugar, packed
  • 14 cup light Karo syrup (add a bit more if you like your caramel to stay sticky after it cools)
  • 14 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 10 cups air popped popcorn (I don't recommend microwave popcorn or popcorn with butter and salt)

  • Pop popcorn and set aside in large bowl. You may want to adjust popcorn depending on the amount of caramel you want on your popcorn.
  • Place butter, brown sugar, and corn syrup in a microwave safe bowl.
  • Place in microwave and heat on high for 2 minutes. Stir thoroughly until butter is completely mixed. Heat on high for an additional 2 1/2 minutes.
  • Remove from microwave and add baking soda and vanilla extract; stir until the mixture becomes somewhat fluffy. Be careful -- it's hot!
  • Pour over air popped popcorn. Toss popcorn to coat.
  • Enjoy!

I am a single mother of two wonderful boys ages 9 and 15. While keeping up with my boys (or at least trying), I work full-time as a manager for risk management firm in Sacramento, California. My schedule is usually very busy...not much rest :)! I enjoy the outdoors, the sunshine (if you couldn't guess based on the public name), love to read, dance, and enjoy life in general. While growing up, my grandmother taught me how to get around in the kitchen. She was born in Italy and was an amazing cook. Cooking always seemed so easy when I watched her, but I soon learned that I needed a little practice. Nonetheless, I enjoy cooking a meal, whipping up an appetizer, or baking an amazing dessert. I usually try to fix healthy low-fat meals, but my boys are pretty picky and sometimes the low-fat meals don't taste so exciting. I try to fix one new dish each week to keep the monthly rotation of meals from getting too boring. For the most part, I try to keep it simple whether it be meals or just life in general!!!
