Microwave Fish Fillets With Peppers and Toasted Pine Nuts

  • Butter a microwave proof dish to take the fish in a single layer. place the fish in the dish, season and drizzle with the lemon juice. Chop the peppers roughly and scatter evenly over the fish.
  • Cover the dish with plastic wrap, pierce a few times and microwave in high for 4 minutes or until fish is tender.
  • In the meantime toast the pine nuts in a dry frying pan and toss on the fish before serving.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees. ( I do pick olives every year) Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget.
