I cooked this and added 1 grated carrot and 1 grated zuchini... I like to hide vegies in my dishes for my son. It was very moist and I loved the flavour from the barbecue sauce. I cooked it in a ring microwave safe bowl, and it was perfect! Something I will cook more regularly because it was soooo simple, quick and tasty.

I've used this recpie for ages! I found it cooks more evenly if you use a microwaveable round casserole dish and form the meatloaf in a ring shape so that there is a hole in the meatloaf. Some of the excess fat goes down into the bottom of the casserole bowl. I also sometimes substitute Ketchup for the BBQ sauce. I also will make amall meat balls of this and cook in the oved at 350F and then freeze. Then take out a few and microwave them for a meat loaf sandwich. Hubby really likes this!

I live by the Atlantic Ocean - beautiful

and spend time with my children [son age 17, daughter age 10]. I enjoy cooking for my family and friends.Every week, on my day off, I try something new. Sometimes it's a "keeper", sometimes it's a dud, but it's always interesting. My husband, son and daughter look forward to "New Recipe Night", and to rating my efforts.
