Microwave Mexican Manicotti

"A coworker shared this recipe with me several years ago. It is a quick and easy meal for busy nights. I have added seasonings to the beef and bean mixture, used Mexican blend cheese, and served with shredded lettuce, chopped tomatoes and diced onions."

  • Combine (uncooked) ground beef with refried beans.
  • Stuff manicotti shells with ground beef/bean mixture and place in a medium casserole dish.
  • Combine taco sauce and water.
  • Pour over filled shells.
  • Cover with plastic wrap.
  • Cook on High for 10 minutes.
  • Turn shells over.
  • Cook 17 minutes at 70% power with wrap vented.
  • Remove wrap; sprinkle with cheese.
  • Heat until cheese is melted.
  • Serve with sour cream and black olives.

  1. This has a great taste and my husband said "the perfect amount of kick". The only problem I had was with making sure the noddles were cooking. I did add some additional taco sauce and cook another 10 mins on 50% to let them cook a little longer. I think next time I will precook the noodles following the instructions for making plain old manicotti in the microwave.
     
  2. This was a wonderful recipe on a night that I looked around and found myself with a lot of beans and pasta but very little time or energy and no stove or oven. To make it vegetarian, I subbed black beans for the beef. The can of refried beans I had only contained 1-1/2 c. beans, so I added a total of 1/2 c. black beans to even out the amounts. This was enough to fill 8 manicotti shells in an 8x8 pan. (It only took me a shell and a half to figure out that it was much easier to stuff the thick bean mixture into the shells with a butter knife than a spoon!) To allow for the extra pasta I used an entire 8 oz jar of taco sauce and upped the water just a bit. In my 1200w microwave (and w/o having to worry about raw meat), I cooked the first part for the full 10 min but reduced the time of the second part to 14-15 min, which worked well. I admit, I wasn't sure what to make of them when they first came out of the microwave, but with the toppings, it was a thing of beauty. The kids liked it so much they all had seconds! We served it with Mexican Hot Corn #36063. I think this would also be really good with cooked shredded chicken and green enchilada sauce in place of the beef and taco sauce; can't wait to try that variation.
