Microwave No-Bake Chocolate Oatmeal Cookies

  • Combine first 4 ingredients in a 2 quart (or larger) microwavable bowl.
  • Microwave on high for 2 minutes.
  • Whisk until butter is melted and incorporated.
  • Microwave on high for 2 more minutes.
  • Whisk well, then stir in remaining ingredients.
  • Let set for 10-15 minutes.
  • Drop onto waxed paper. (I use the medium Pampered Chef scoop.).

Questions & Replies

  1. Could you use 1c brown & 1c white sugar? Also, since I bake with plant-based spreads, would that hinder the recipe? Thanks.

  1. It was great. The only thing I did differently is I added the vanilla in at the beginning. Tasted just like my mom’s old recipe that she cooked on stove.

My passions are raising children with good moral character, being a good Christian, and food! My pet peeves are recipe instructions that leave out what to do with one of the ingredients, and people who won't put their shopping carts in the cart corrals! I have twin daughters who are in their second year of college and a son who is 16. My girls' college is close enough that I can come by every couple of weeks or so. When I tell them I'm coming, they ask Are you bearing baked goods?. Usually, I am, to the excitement of their suitemates!
