Microwave Scottish Pudding

- 1⁄2 pint water
- 4 ounces white sugar
- 2 eggs, beaten
- 1⁄2 lb plain flour
- 1 tablespoon mixed spice
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1⁄2 lb butter or 1/2 lb margarine
- 1⁄2 lb sultana
- 1⁄2 lb raisins (or if you prefer, 1 lb. desired filling)
- 1 tablespoon treacle
directions
- Put into a large pan, water, spice, cinnamon, fruit, sugar, margarine, treacle. Bring to a boil then simmer for 1 minute only. Stir in flour, soda, and eggs. Mix very well. Put the mixture into a pudding basin lined with enough cling wrap to go over the sides. Do not cover the mixture. Microwave for 6-9 minutes. When cooked, keep in wrap, or remove the wrap if you do not want the skin to form on the dumpling.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
