Microwaved Potato and Onions

  • Layer potatoes and onions in a microwave proof, coverd dish.
  • Salt and pepper to taste.
  • Add butter on top.
  • Microwave covered for 10 to 15 minutes until potatoes are fork tender.

  1. This was wonderful! I used 2 large potatoes and 1 large onion. I switched 2-3 tbsp olive oil for margarine and that worked fine. And I added Lawry's seasoning. I used the full 15 min cook time. I also tried pouring the finished mixture on a cookie sheet and browning it slightly - since I like that taste. I uploaded pictures both ways. Either way - thank you for an easy, delicious recipe!
     
  2. Made this twice. Should have made more both times; everyone was looking for thirds. Very tasty. And quick and simple. Excellent for summer cooking since it doesn't heat up the kitchen (although whatever I make to accompany this usually does! Talk about poor planning!) Put some crushed flavored potato chips on top when done for extra flavor. (Yes, I was snacking while cooking. Not a good thing, is it?)

I was a fan of Graham Kerr's Galloping Gourmet and my mother helped me buy the ingredients and cook Steak Diane after I saw it on his show. <br /> <br />I can't cook for the family every night, but I try try to have one or two nights a week when I can fix them a home meal. Sunday is the day when my wife, 3 kids, 1 daughter-in-law, and 2 grand daughters get together to have a big dinner. <br /> <br />My picture is me holding my babies. Being a grandfather is really great. They call me Papa by the way.</p>
