  • Place a non-stick skillet on a burner set at medium-high. Heat for about 2 minutes.
  • Toss in the onion, garlic and tomato and saute for a minute or two.
  • Add in the spinach and stir.
  • Allow to cook until most of the water is gone - stirring every now and then.
  • Add the egg whites and toss around until egg whites are cooked.
  • Remove from heat.
  • Plate and garnish with the salsa, cheese and tortilla chips.
  • Enjoy!
