Directions

  1. Mix brown sugar through thyme in a small bowl and set aside.
  2. Heat a drizzle of olive oil in skillet over medium-high heat, add onion, bell pepper, and carrots and sauté 2-3 minutes.
  3. Add ground beef and brown until cooked through breaking up with a spatula.
  4. Remove from heat, drain any excess fat.
  5. Return pan to medium heat add tomato paste and stir until evenly distributed & slightly brown.
  6. Add in sugar/spice mixture and stir thoroughly, add remaining ingredients, stir to combine.
  7. Heat until simmering, reduce heat to medium low, simmer 20 minutes stirring occasionally.
