  1. Cut lotus root into thin slices.
  2. Saute in frying pan with olive oil for a few minutes. Be careful not to sauté too long, as lotus root tastes best when still a little crunchy.
  3. Mix in sugar and soy sauce and continue to cook until well incorporated.
