Mimi's American Chop Suey

"When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper."

  1. I ate this often growing up in New England in the late 50's and 60's. It was called American Chop Suey in every household I knew. Everyone *knew* it wasn't authentic Chinese cuisine, but that was the name we all used back then. "Chop Suey" means "assorted pieces", which is very appropriate for this dish. Our family version included celery cut on the bias, and substituted a can of diced tomatoes for the tomato soup. The possible variations are endless, and the ingredients list depended on what we had on hand. It's a great way to stretch a pound of ground beef.

  5. My grandmother, who we called Mimi, made her American Chop Suey just like this. I've seen so many variations of this recipe, but many don't use the tomato soup like she did. It's so good that way, adds that extra bit of sweetness. When I got older my in laws said they were making goulash and I had never even heard that name for it before! I think I may have to make this this week!
