Mimi's Gingerbread Scones

"I found this in a magazine years ago and loving gingerbread flavor as I do, I had to try these. They are yummy! These are wonderful with a cup of tea."

  • Combine the first eight ingredients.
  • With a pastry blender, cut in the butter till there are coarse crumbs.
  • Make a well in the center.
  • In small bowl mix the next five ingredients--the egg, egg white, molasses, milk, and vinegar.
  • Mix this well; it may be a little dry.
  • Put on floured board and knead a few times till smooth.
  • Pat into a 7" circle and cut into 8 wedges.
  • Arrange on an ungreased baking sheet having the wedges 1" apart.
  • Brush with the extra beaten egg white and sprinkle with sugar.
  • Bake in a 400 degree oven for 12-15 minutes.
  • Cool on a wire rack for 20 minutes.
  • Serve warm.

I love them all. <br /><br />Hosta is my favorite plant, the only plant I own. I now have 123 varieties and they all have names. I add to them each year. I love to do cross stitch, paint, scrapbook, and rubber stamping. <br /><br />I have a rare genetic lung disase called Alpha-1 Antitrypsin Deficiency (Type ZZ) that most people have not even heard about. Most doctors may have heard of it but don't know an awful lot about it and so many times it goes misdiagnosed.
