Mimi's Vegetable Casserole

"A must-have at our family's Thanksgiving. This is the best - I can eat it hot or cold as a leftover. Great way to get veggies into folks who don't like them."

  1. I LOVE this dish, and so did my husband! I made this with some small changes to make it a bit healthier; reduced fat ritz crackers, light sour cream, all of the soups either low sodium/fat, reduced fat cheese, and smart balance light butter...it was still delish!! I baked it for 45 minutes.

  2. Delicious. I wouldn't change a thing. I will definately be making this again soon. Thanks Bogey'sMom!

I'm a Marine Corps wife and mother of two children with skin and three with fur. I consider myself a "southern cook", but I love to try new stuff, too. I'm also a registered nurse and my specialty is Neonatal ICU. We are currently stationed near Washington, DC and we really, really could not hate it more. We are not big city people. We prefer the quiet mountains of Vermont, where my husband is from. I am into my own spirituality, and love to study religions of different kinds.
