- 500 g beef mince
- 250 g cooked pasta
- 2 tablespoons oil
- 1 onion
- 2 garlic cloves
- 1 small green capsicum
- 1 small red capsicum
- 1 cup broccoli
- 1 cup beans
- 1 can of peeled tomatoes
- 1 tablespoon herbs
- 1 beef stock cube
- half a cup hot water
- half cup tomato paste
- parmesan cheese
directions
- Boil Water to cook Pasta - any kind is fine (shells, penne).
- While Pasta is cooking.
- Chop all vegetables finely.
- In a large fry pan (I use electric).
- On medium heat to high heat.
- add the oil.
- add the onions and garlic, stir til just cooked.
- add the mince and brown through.
- Add the rest of the vegetables.
- Stir well.
- To half a cup of hot water, add the Beef Stock Cube (I use Massell).
- mix til dissolved.
- Add Stock and the Tomato paste to the pan and stir.
- Drain off the pasta.
- Add the pasta to the pan (or into the bowls).
- Simmer for 10 minutes covered, stirring twice.
- Serve with Parmesan cheese on top.

I am married and a mum of 4 with 2 step children as well, i like to cook. I like it when i have enough time to put into cooking as i work full time, so i am often looking for fast delicious things to satisfy the troops :)
they love carbs so i often make pasta dishes.
they love Potatoes as well so they are always a hit - my latest thing is Stir Fry's - quick and easy and the kids can help with cutting everything up. I often have the 2 girls in the kitchen and they are good at making cakes, so today i have looked up some traditional Christmas Recipes for us to make on Friday night - we are making Rum Balls & White Christmas :)
