"I long ago forgot the actual name of this recipe which I have enjoyed for years. The four children I was a nanny for always called it Mindy's Cookies and requested them often."

  • Preheat oven to 350 degrees.
  • In a large mixing bowl combine the sugars and cream together with the butter and peanut butter using a wooden spoon.
  • Stir in the vanilla and the eggs.
  • Add the flour into this mixture in 3 parts stirring well in between each addition.
  • Stir in the oats, baking soda, salt, and chocolate chips until well blended.
  • Drop by rounded teaspoon two inches apart onto an ungreased cookie sheet.

I have loved to cook since I was a small child. I quite often would make my family dinner nightly after I turned 9. I, to this day, love and enjoy cooking, trying new recipes, and even creating my own. For 5 years I cooked dinner nightly for the family I was a nanny for. I have since moved far away from them and the children and their parents stll call me and ask for my recipes and tell me they miss my food. I currently have the pleasure of cooking for my husband, but also enjoy having friends over on the weekends to entertain and serve up some quality food.
