Minestrone With Tortellini Soup

"This soup is perfect on a chilly night with hot, crusty bread. I have used the hot turkey sausage and this comes out perfect every time. It also looks pretty enough to be a company dish too!"

  • Remove sausage from casings. In a 5 quart (or larger) pot brown sausage. Drain excess fat. Add onions. Saute until tender.
  • Add beef broth, wine, tomatoes, carrots, catsup, Italian seasoning, garlic and celery. Bring to a boil. Simmer 30 minutes. Skim excess fat.
  • Stir in zucchini, tortellini, green pepper, and parsley. Simmer 30 minutes, covered, or until tortellini are tender.
  • Season with salt and pepper.
  • Serve with grated parmesan cheese to sprinkle on top.
  • Enjoy!

I have always loved to cook. I really love to try new recipes! RecipeZaar is perfect for looking for new recipes. It's the first place I go when looking for something new! My husband and I moved to Northeast Arizona (up in the mountains) in April (2007). We live near Show Low. The summer was absolutely beautiful! It never got to 100 degrees! Coming from Phoenix, we both enjoy being away from the heat and the city. Our first snow this year was absolutely gorgeous! My recipe ratings pretty much follow the star system. I will usually make a recipe as is the first time. I say usually but I do still change things sometimes. I try to be fair if I have made changes. I will rate 5 stars if we LOVE it and it will be a regular dish around our house. 4 stars if we really liked it and 3 stars if it was just OK but we wouldn't make it again. I realize everyone's tastes are different so I do try to be gentle. Cooking can be a very personal thing to someone. Another creative outlet for me is beading. I love to make beaded jewelry.
