Mini Baked Potatoes With Guacamole

"These are great to take to a BBQ, or to serve as a light lunch. Yu could use 2-3 large potatoes if you want."

  • Boil, steam, or microwave poatoes until tender.
  • Cut off the tops and scoop out the middles.
  • Place potatoes on a baking tray and spray with oil.
  • Bake for 10-15 minutes at 200C, or until golden and crisp.
  • Set aside to cool.
  • When potatoes have cooled, fill with guacamole.
  • Top each potato with a tspn of salsa, and sprinkle with parsley.

  1. I used regular potatoes for this recipe. Otherwise I followed the recipe as listed. This is a nice lowfat alternative to sour cream and butter. The guacamole and salsa on the potato was great. Made for ZWT 2011.
