12 mini cheesecakes
ingredients
- 12 vanilla wafers
- 2 (8 ounce) packages cream cheese, softened
- 1⁄2 cup sugar
- 1 teaspoon vanilla
- 2 eggs
directions
- Line muffin tins with foil.
- Place one vanilla wafer in each liner.
- Mix cream cheese, vanilla and sugar on medium speed until well blended. Add egg, one at at time, blending well after each addition. Pour over wafers, filling 3/4 full.
- Bake at 325F for 25 minutes.
- Remove form pan and cool.
- Top with fruit preserves, nuts or chocolate.
- BE CREATIVE!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
