Mini Meat Loaf

"My husband loves meatloaf, but we couldn't agree upon a recipe. He also likes leftovers and I don't. When I make this I actually at least double it (using 1 egg per pound to pound and a half of meat). After mixing, I split it into equal portions and place in mini-loaf pans. I then freeze all but the one I'm using that day. When using the frozen meatloaves, thaw in the fridge at least 8 hours or more, don't place frozen in the oven."

  • Mix all ingredients throughly.
  • Bake at 350F for 30-45 minutes. (Internal temperature should be at least 165F.).

I'm a stay at home mom with a young daughter. I'm looking for small portion meals usually for our lunch. Since DH and I both love desserts and hate waste, I keep an eye out for smaller sized dessert recipes. Since my husband enjoys cooking, he typically handles the evening meal. We are trying to eat healthier, so less prepared mixes, and canned soups, and more things from scratch.
