“Found this in a hand out from Lucky's. A little healthy but more healthy with egg whites and turkey bacon.”

Ingredients Nutrition

  • 4 slices turkey bacon, cut into 1/4 inch pieces
  • 12 red bell pepper, diced
  • 12 small red onion, halved and sliced
  • 34 cup sliced white mushroom
  • 1 cup chopped Baby Spinach
  • 8 large egg whites
  • 2 large eggs
  • 14 teaspoon salt and pepper
  • 3 tablespoons shredded cheddar cheese


  1. In large skillet, cook bacon.
  2. Add bell pepper, onion and mushrooms, and cook for 5 minutes. Remove from skillet; stir in spinach. In medium bowl, whisk together egg whites eggs, salt and pepper.
  3. Spray 8 standard muffin cups with nonstick cooking spray. Evenly divide bacon mixture into prepared muffin cups; sprinkle cheese over back mixture. Evenly pour egg mixture over shredded cheese in muffin cups.
  4. Bake 20-25 minutes or until tops are lightly browned. Cool in pan 5 minutes; then invert over plate.
