Directions

  1. Preheat oven 325 degrees. Line two muffin pans with paper cups (DO NOT USE FOIL CUPS).
  2. Place one vanilla wafer rounded side up in the bottom of each cup.
  3. Beat cream cheese in a large bowl with mixer on medium speed until smooth.
  4. Cream together cheese and sugar.
  5. Add eggs one at a time until well combined. Mix together remaining ingredients.
  6. Spoon into cups so that they are halfway full.
  7. Bake 20-25 minutes or until firm and toothpick tester comes clean.
  8. Promptly refrigerate and top with whipped cream or fruit filling if you'd like or serve plain.
