  • Preheat oven 325 degrees. Line two muffin pans with paper cups (DO NOT USE FOIL CUPS).
  • Place one vanilla wafer rounded side up in the bottom of each cup.
  • Beat cream cheese in a large bowl with mixer on medium speed until smooth.
  • Cream together cheese and sugar.
  • Add eggs one at a time until well combined. Mix together remaining ingredients.
  • Spoon into cups so that they are halfway full.
  • Bake 20-25 minutes or until firm and toothpick tester comes clean.
  • Promptly refrigerate and top with whipped cream or fruit filling if you'd like or serve plain.
