  • Mix chicken with cornstarch, salt, sugar and 1 tablespoon soy sauce. Let stand 10 minutes. Heat one tablespoon oil in skillet.
  • Saute scallions, bean sprouts and bamboo shoots for 2 minutes.
  • Season with remaining soy sauce and remove from pan.
  • Heat 1 tablespoon oil in skillet and saute chicken 2 minutes.
  • Return vegetables to pan and cook together for 2 minutes. Cool.
  • Put small amount of filling in a wrapper and roll up.
  • (Fold over sides and then roll.).
  • Deep fry until light brown if you are going to freeze or until darker brown color if you are going to use right away.
  • Drain on paper towels.
  • Freeze.
  • Heat directly from freezer for 10 minutes at 400 degrees.
