  1. Mix sugar, oil, vanilla, mint extract and chocolate in a large bowl. Mix eggs in, one at a time. Stir in the flour, baking powder and salt. Add chocolate chips.
  2. Cover and refrigerate for 3 hours.
  3. Heat oven to 350 degrees. Grease cookie sheet with shortening.
  4. Shape dough into balls and roll in powdered sugar to coat. Place 2 inches apart on cookie sheet
  5. Bake 10-12 minutes. Cool and serve.
