  • Combine first 4 ingredients in a large mixing bowl; stir well.
  • Combine 4 egg whites and next 3 ingredients in a small bowl; add to dry ingredients, stirring well.
  • Spread batter in an 8-inch square pan coated with cooking spray.
  • Combine cream cheese and remaining ingredients in a medium bowl.
  • Beat at low speed of an electric mixer until smooth.
  • Spoon cream cheese mixture by tablespoonfuls over cocoa mixture.
  • Cut through cream cheese and cocoa mixtures with a knife to create a marbled effect.
  • Bake at 350°F for 22 minutes.
  • Let cool in pan.
  • Cut into bars.

  1. They turned out dry, but if you were making them for your kids they would dip well in Milk. I used half sugar and half splenda and it worked out great. I also doubled the recipe and used a raised cookie sheet for a thin brownie.
     
  2. It was good...I mean I enjoyed it...but it was just too dry for me to love it. Perhaps if next time I added 1/4 cup applesauce in addition to the 1/4 oil. Also, I didn't have peppermint extract, so I just used some Mint syrup. Had a nice, subtle flavor. My favorite part was, by far, the cream cheese top! So luscious and rich, and I couldn't believe that I had made it with fat-free cream cheese! If I can find a way to make these more cake-like brownies, and less dense, I will definintely be making these a lot!
