  1. To make simple syrup: Mix water and sugar in a saucepan. Bring to a boil and then turn heat down to low. Simmer 3 to 5 minutes or until sugar is completely dissolved. Allow to cool before proceeding.
  2. Blend the melon, simple syrup, mint, lemon juice and and salt in a blender or food processor. In batches, if necessary. Freeze in an ice cream maker according to manufacturer's instructions.
