Minted Cucumber-Yogurt Raita

ingredients
- 2 cucumbers, peeled, seeded and shredded
- 1 cup plain yogurt
- 1 scallion, minced (white and green parts)
- 1 tablespoon chopped of fresh mint (1/2 tsp dried)
directions
- Combine all the ingredients.
- For best flavor refrigerate for at least an hour before serving.
- Serve chilled.

This is probably not my thing. It was very fresh and tasty but just not what I thought it would taste like. This type of food is new to me. It seemed kind of watery so I would suggest maybe squeezing more water out of the veggies before adding the yogurt. Maybe my cukes were just really juicy or maybe it is supposed to be that way. The flavor of the mint with the cukes was very refreshing though.
