- 2 large beets
- 6 mint leaves
- 1 cup nonfat yogurt

- 2 large beets, cut into chunks and steamed.Set the beets to cool, while you cut.
- 6 mint leaves very fine.
- Mix with 1 Cup of plain, non-fat yogurt.
- The yogurt will curdle if the beets are too hot.
