Mixed Green Salad With Strawberry Dressing

“Strawberries are grown in abundance where I live, so I am always looking for a good recipe. This is one of them! Splurge and buy a good quality feta cheese....it makes a huge difference. I originally got this recipe from Bon Appetit but have changed it some what to suit our needs”

Ingredients Nutrition

  • 1 lb strawberry, hulled, halved
  • 5 ounces mixed baby greens (or baby arugula or a mix of both)
  • 12-34 cup feta cheese, crumbled
  • 1 avocado, chopped (optional)
  • 12 cup walnuts, toasted
  • 13 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon sugar

Directions

  1. Mash enough strawberries to measure 1/3 cup.
  2. Place remaining strawberries in large bowl. Add greens, cheese, avocado and nuts.
  3. Whisk oil, vinegar, and sugar in small bowl to blend. Whisk in mashed strawberries. Season dressing with salt and pepper.
  4. Add to salad; toss to coat.
