  1. Beat margarine at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add egg substitute; beat well.
  2. Combine flour, baking soda, salt, cocoa, and coffee granules. Add to margarine mixture; beat just until blended. Stir in chocolate mini-morsels.
  3. Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray. Bake @ 375 degrees for 5 to 6 minutes. Remove from cookie sheets and let cool completely on a wire rack.
