Mock Girl Scout Thin Mint Cookies

"These are good, but not really the same as Thin Mints, but in a pinch they work. Thought this was an interesting recipe on its own."

  • 1 lb chocolate-flavored candy coating (I use Plymouth Pantry that I buy at Wal-Mart or Wilton Candy Melts)
  • 1 tablespoon vegetable shortening (I use Crisco)
  • 3 drops peppermint oil (I use Lorann Oils that I buyat Wal-Mart)
  • 65 Ritz crackers

directions

  • Melt chocolate coating.
  • I melt mine in a large bowl in the microwave.
  • Stir in the peppermint oil and the shortening.
  • Dip Ritz crackers in chocolate cover completely.
  • Place coated crackerers on waxed paper and let sit until chocolate is hard.
  • Store in air tight container.

  1. An easier way to do this recipe is to buy low sodium Ritz crackers (so there isn't so much salt) and Andes mint chocolate pieces--you can find these where you'd find chocolate chips. Melt the chips in a glass bowl in the microwave and stir until all pieces are melted. Dip the crackers in, place on parchment paper (I spray with a little Pam) and you have cookies that I think are BETTER than the favorite girl scout version.
     
  2. We thought these were awesome! I actually found this recipe elsewhere and came to see if anyone had posted. They are absolutely delish! I used a 1/2 tsp peppermint extract instead of peppermint oil. We liked that little bit of saltiness the crackers added. I will be making these again. Next time though I might try 1/2 Tbsp of crisco - just because I never use crisco. I had to go out and buy a small can as it is not something we keep in the house. We store them in the freezer and eat them right out of the freezer. The fridge might be good too if you don't like them frozen.
     
  3. These are so easy & so good. I found that the store brand crackers work a little better because they aren't so salty.
     
  4. I also added more mint flavor to mint flavored chips. The flavor was there , I had a problem with the crispness
     
  5. These are very good! They're messy to make but so worth it! I agree with other members, to use low salt crackers! And I love the Andes candy idea too! I'll have to try that! I added my photo!
