  • Melt butter in saucepan. Stir in flour until smooth. Remove fro heat and gradually stir in yogurt. Add salt.
  • Heat over moderate heat until it boils, stirring constantly. Remove from heat.
  • Stir a little of the hot mixture into the yolk and return this to the saucepan.
  • Stir over very low heat for about 1 minute. Stir in sherry and cayenne.
  • Serve with scallops, lobster or other seafood.
