Mock Newburg Sauce With Yogurt

- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup plain yogurt
- 1⁄2 teaspoon salt
- 1 egg yolk
- 1⁄4 cup dry sherry
- cayenne
directions
- Melt butter in saucepan. Stir in flour until smooth. Remove fro heat and gradually stir in yogurt. Add salt.
- Heat over moderate heat until it boils, stirring constantly. Remove from heat.
- Stir a little of the hot mixture into the yolk and return this to the saucepan.
- Stir over very low heat for about 1 minute. Stir in sherry and cayenne.
- Serve with scallops, lobster or other seafood.
