Directions

  1. Melt butter in saucepan. Stir in flour until smooth. Remove fro heat and gradually stir in yogurt. Add salt.
  2. Heat over moderate heat until it boils, stirring constantly. Remove from heat.
  3. Stir a little of the hot mixture into the yolk and return this to the saucepan.
  4. Stir over very low heat for about 1 minute. Stir in sherry and cayenne.
  5. Serve with scallops, lobster or other seafood.
