  • 1 medium jicama
  • 1 tablespoon garlic salt

  • Peel jicama.
  • Slice into matchsticks (a mandolin is very helpful for this).
  • Fry in small batches until crispy in oil heated to 350 degrees. It usually only takes one or two minutes. Large batches may get soggy.
  • Drain on paper towels and sprinkle generously with good-quality garlic salt.
