Modeling Chocolate

"This has a consistency very similar to a tootsie roll, only softer. You can roll it flat (using rolling pin or pasta machine, the latter being easier), and tie it into bows, form it into flowers, and shape it into leaves or doo-dads. Handle it as much as you wish--it's very sturdy! From Mollie Katzen. I haven't tried this but it sounds so fun! For the kids --or for you!! Cook time includes cool time."

directions

  • Melt the chocolate in a bowl over a saucepan of gently simmering water.
  • (Or use a double boiler.) Stir in the corn syrup, and the chocolate will stiffen immediately.
  • Stir until completely combined.
  • Wrap in plastic, and cool to room temperature.
  • When it's time to work with it, just knead it like dough.
  • It will soften to just the right texture from contact with the warmth of your hands.
  • Roll with a rolling pin, or pass it through a pasta machine, beginning with a wide aperture, then gradually decreasing the size of the opening until it reaches your preferred thinness.
  • Shape it any way you want!

  1. Thanks for posting this fun recipe. I found it worked best passed through the pasta machine to make ribbons or bows and using small metal cutters. I tried to make flowers but the warmth of my hands made quickly go sticky and there for difficult to work with. Once made and ready to wrap, it is best to right away flatten it before it firms up again.

  2. I always make cakes for my family's events and we celebrated my baby's first b-day a few days ago and I wanted to do take my cakes to a new level by decorating w/t modelling chocolate and came across this recipe. I couldn't believe how easy it was to make the chocolate and it was so much fun making diff. things w/t it. Everyone at the party was blown away w/t the fact the all the chocolate work was done by me (and some by my little monkeys, that's how easy it was). The only thing I found troublesome was that my chocolate was a bit too hard and really had to roll it in my palms but I might have used a tbsp extra of honey (it's a sub for corn syrup). Thanks for sharing.

  3. I liked it! I had trouble with the pasta machine, it stuck in the rollers, loved the simplicity!

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
