Moist Apple Quickbread

"It is apple season in NY! This is an adaptation of a recipe I found on-line. Easy to make, moist, and delicious. Very nice toasted with a smear of cream cheese."

  • Preheat oven to 350 degrees. Grease and flour a quick bread pan. Alternatively, line pan with parchment sprayed with cooking oil.
  • Peel and core apples. Grate them or chop them finely in a food processor. Set aside.
  • Beat eggs, oil, sugar, and vanilla until consistent.
  • In a separate bowl, mix flour, baking powder, baking soda, salt and cinnamon.
  • Mix the dry ingredients into the wet ingredients.
  • Add the apples and walnuts. Mix well.
  • Pour mixture into prepared pan.
  • Bake for 50 to 60 minutes, or until the center is set and it passes the toothpick test.
  • Serve warm with cream cheese.
