Moist Lemon/Orange Zucchini Muffins

  • Mix together the eggs, oil, lemon rind, lemon juice,sugar, orange juice& Zucchine Mix together the flour, baking powder, baking soda, salt& nutmeg.
  • Make a well in the middle of the dry ingredients and pour in the zucchini mixture, Mix well but lightly.
  • Spoon batter into muffin tins lined with paper cups or without paper cups.
  • Bake in 450F oven for apprx 20 minutes.
  • Enjoy.

  1. Could just be me, but the cooking time on mine was half (closer to 10 min than 20 for regular-sized muffins). For mini muffins, it was closer to 5 minutes. Otherwise, I really enjoyed the muffins. They are best when served warm, so I reheated mine in the toaster oven to give that fresh-from-the-oven taste.
     
  2. Maybe they cooked just a little bit too much but they're still yummy. They're too golden, but inside they're moist. Since I don't like nutmeg, I used cinnamon and a little bit more. I used half canola oil and half unsweetened applesauce. I used only 1/3 cup of sugar. My son wanted to have a muffin for a snack at school. He likes zucchini muffins and he likes yours :) Thanks Bergy :) Made for all you can cook buffet
     
  3. Very good muffins... I substituted virgin coconut oil for the canola and baked them about 13 minutes (kept checking them after 10 minutes to make sure they didn't overbrown), but otherwise I followed the original recipe. My muffins were very light with a delicate crumb. Thanks for posting...
     
  4. Wonderful recipe! I adjusted the sugar to 1/2 cup, substituted half the oil for applesauce, and used only orange zest and juice, and they turned out amazing! I don’t think I’ve ever made a muffin recipe that calls for such a hot baking temperature, and it made them turn out so beautiful and golden with a really nice crispy top! 100% will be making this again!

  5. These are fantastic! I only had one small zucchini so I managed to get a cup out of it. I added a couple of TBS. of vanilla yogurt to make up the moisture. I also added both lemon and orange zest and a little ginger along with the nutmeg. I just ate one and it's very good but am going to make a lemon orange glaze to kick it up a notch! Thanks for a gr8 recipe!!

  1. My son & DH loved them, can't usually get them to eat zucchini at all! I used 1/3 cup of melted butter instead of the oil. I also blended up the zucchini & juice together to make it smooth.

On January 10 2010 I will celebrate 9 years of Life with Zaar. I can't imagine being without it! It has become part of my daily routine. I feel very privileged to be one of the hosts on the Photo Forum. Taking photos of my culinary efforts is a full time hobby and I love it. My friends all know what to expect when they come to dinner "Are you finished taking pictures?" or "Did you get a photo of so & so?" I never let them wait too long and the food is NEVER cold! I now have over 6000 photos on Zaar - some fairly good and some definitely not so good. I am happy to say that practice does help. My roots are in Vancouver BC Canada - a very beautiful city that holds many wonderful memories for me. In 1990, I decided that for my retirement years I may want to settle in a smaller community and found a slice of heaven in the North Okanagan B.C. I love living here but every once in a while I miss the bright city lights, the Broadway shows and some of the small wonderful ethnic restaurants that Vancouver abounds in. That is easily resolved. I just take a trip to the coast, visit with friends for a weekend see a show and feast on Dim Sum or other specialty foods. I am getting a bit long in the tooth but was a very adventurous person. I have river rafted Hell's Gate on the Fraser river, been up in a glider over Hawaii (no not a Hang Glider!), gone hot air ballooning in the Napa Valley & the Fraser Valley, driven dune buggies on the dunes in Oregon, Para sailing in Mexico and tried many other adventurous, challenging, fun things. I have yet to try bungee jumping or sky diving. I may do them yet. I love to travel and experience other cultures. Mexco has been a favorite haunt. I have visited that lovely country many many times. Australia is another favorite as is England! In the past 16 months I have taken off 61 pounds and feel wonderful. I am off all medications and all systems are GO! In years I may be 79 but in spirit I am still in my forties. We are only as old as we allow ourselves to feel. Always think positive. Do something a bit challenging every day & always do something silly every day. Be a kid again! Laugh every day - it is internal jogging.
