Mom Florence's Tacos

"This is how our family makes tacos. It was one of the first things I learned to "cook". It seems so easy it shouldn't even be posted. The hardest part is finding enough bowls so everyone can fill the tacos the way they want. Leftovers can be a nice taco salad--if there are any."

  • Shred the cheese in one bowl.
  • Chop the onion into one bowl.
  • Place the olives into one bowl.
  • Put the sour cream in one bowl.
  • Put salsa in one bowl. (See the theme of the night?).
  • Put refried beans in microwave bowl and top with a little cheese and a little salsa. Heat until hot.
  • In one pan, brown the ground beef and, of course, put in bowl when everyone is at table and all bowls are on table too.
  • Heat about inch of oil oil in another fry pan and fry the corn tortillas about 1 second on each side (not very long or they will be hard shell). Use tongs to turn tortillas and put on plate with paper towels. These don't hold very long, so serve immediately.
  • Cook should eat 1 taco first to get jump on everyone else--lol!

  2. My family loved experiencing these yummy tacos! We had fun gathering together and filling the tacos almost as quickly as they came out of the pan. I made the shells using white corn tortillas, fryed for a second on each side then folded, fryed some more, and served almost immediately while they were still hot, puffy, soft, and delicious. These tacos are something we'll definitely enjoy again ~ Thanks Dee for sharing your family's technique!
     
  3. I decided to try this recipe because we always make tacos with prepackaged meat seasoning mix and I thought this would be a nice change. It was great. We also added corn to the options and I used green onion instead of regular onions. I think they were some of the best tacos I have ever eaten. I didn't cook the tortillas in oil, I just heated up the flour tortillas in a hot pan til soft. Yum.

LOVED this - pure comfort food :) For the refried beans I used recipe #240816 and in place of the Monterey Jack cheese, which is not available here, I used mild cheddar for DH and mild sheep's cheese for me.
