- 2 1⁄2 cups confectioners' sugar
- 2 cups walnuts, ground in a blender
- 7 tablespoons cocoa
- 1⁄8 teaspoon salt
- 2 extra large egg whites, beaten lightly
- 1⁄4 teaspoon vanilla
directions
- Preheat oven to 350 degrees.
- Whisk together confectioners sugar, nuts, cocoa and salt. Add egg whites and vanilla. Stir until combined.
- Form into tablespoons size round balls and place on parchment lined baking sheet. Press balls with bottom of glass to flatten slightly.
- Bake for 15-17 minutes or until the tops appear dry and light in color.
