Mom T's Refrigerator Bran Muffins

ingredients
- 5⁄8 cup butter
- 3 cups sugar
- 4 eggs, beaten
- 1 quart buttermilk
- 2 cups all-bran cereal (pellet shape)
- 2 cups boiling water
- 5 cups flour
- 5 teaspoons baking soda
- 1 teaspoon salt
- 4 cups all-bran cereal (long type)
- 2 cups raisins (you may substitute blueberries, figs or dried apples)
directions
- Cream butter and sugar.
- Add beaten eggs and buttermilk to butter mixture.
- Mix together and let stand a minute the All Bran (pellets) and the boiling water. Set aside.
- Mix dry ingredients, flour, soda and salt. Add choice of fruit. Set aside.
- Add soaked All Bran to creamed mixture.
- Add dry ingredients to this. Add the All Bran (long type) and stir slightly until mixed.
- Let stand in refrigerator 24 hours.
- When ready to use stir and then bake in greased muffin pan for appoximately 20 minutes at 400 degrees.
- Store extra batter in airtight container in refrigerator.
