Mom T's Refrigerator Bran Muffins

"There are other recipes for these muffins but none of them are the same as this one. I hate most bran muffins but these are wonderful! Who knew eating healthy could be so yummy! This batter can be kept in the refrigerator for a couple of weeks so you can bake fresh batches when you want them. I usually make 6 at a time."

  • Cream butter and sugar.
  • Add beaten eggs and buttermilk to butter mixture.
  • Mix together and let stand a minute the All Bran (pellets) and the boiling water. Set aside.
  • Mix dry ingredients, flour, soda and salt. Add choice of fruit. Set aside.
  • Add soaked All Bran to creamed mixture.
  • Add dry ingredients to this. Add the All Bran (long type) and stir slightly until mixed.
  • Let stand in refrigerator 24 hours.
  • When ready to use stir and then bake in greased muffin pan for appoximately 20 minutes at 400 degrees.
  • Store extra batter in airtight container in refrigerator.
